Another pretty pink thing – lychee mousse cake. Delicate, soft and floral. It has a chocolate joconde sponge base, topped with lychee mousse and slices of lychee jelly. The colour and textures are incredibly enticing.

If you, like us, are a fan of mincemeat tarts, then try this variation – frangipane mince pies, which are light and almondy flavoured little tarts. We like Nigella Lawson’s cranberry mincemeat recipe in this one but feel free to use ready made mincemeat and pastry for a super quick rather gourmet looking patisserie.
